Idling troubles.

Hello,
Got my XJ a few weeks ago now and have done a lot of maintenance since it was sitting for a while. This site was amazing when looking for answers on things so thank you all.
Anyway now that its running I am having some trouble with the idle. Carbs were cleaned out, synced (properly I think, my buddy said he knew what he was doing, I trust him. I've never worked on a bike with more than one cylinder before since all my motorcycle experience is dirt bikes.) and it was running fine the first day i took it for a few laps around the block. It felt very strong all around. Next day I took it out for a ride with my buddy, just around town. We were a few miles from home and it just stalled out at a stop sign. Wouldn't start and almost killed that battery trying, until I walked it down the street to a gas station where luckily they were cool and lent me a charger. Got it going again and it all felt fine and made it home. Then a few days later went to take it out again and I didn't even leave the garage because it was not running right at all. Idle was off and when I adjusted the idle screw it would either jump up to 3-4k sometimes higher or it would fall down to 1500-1000 for a few seconds and then drop off and die. Didn't have time to mess with it that day so it sat for a few. I ordered intake boots since they were cracked. Today before installing the new boots, it started with no problem, idle was okay but not great. Went around the block a few times and it stalled out once at a stop again. Started right back up, no other issues. Went home, put new boots on, started back up and sounded much better. Idle was sitting pretty solid at 1100-1200 or so. I was very happy. Rode around a little bit and it felt great. I was loving life. For a few minutes at least. Now when I set the idle screw it will hold around 1100 and sound great but then after a few minutes of riding and then coming to a stop it will idle up at like 3000-3500. Stick my hand under and give the screw a few tweaks get it back down to 1100 area, stays there nicely but then again at the next stop it is idling way high. Did this a bunch of times while riding around town. At speed it feels great but when I come to a stop and it is screaming still. I don't understand it. Why would it be doing that? Gonna try and check the carb sync again but what else should I look at? Just looking for some advice/thoughts/have you seen this before?
I'm frustrated after getting some miles on it but its not reliable enough to really go out and ride yet.
