clattery & unresponsive at low throttle

don't know how to describe this except to say my motor is clattery and unresponsive at low throttle. also have a little smoke from one pipe
Ive just been through the carbs and waited to sync them before I started complaining. don't yell at me but I didn't adjust valves first. the cover is rtv'd on and I know once I get in there I will have to re-sync. because I just rebuilt the carbs, ive got it in my head that I screwed something up. but I was careful and that could just be a general lack of confidence in my first carb build. I did re-jet while I was in there.
the bike will idle fine enough although it seems a little rough. once I grab any throttle it gets rough and tries to die. if I baby ( and I mean REALLY baby) the throttle up and through the rough spot the motor seems to level out. it will make power well and quiets down to what I can gather from other posts is an acceptable clatter. no idea where the rough spot is as the gauge cluster was removed long ago.
any thoughts on where to start?
