Pilot screw/air fuel mixture screws all broken?

Ok, had a few hours today to work on this thing again today (my time is a hot commodity these days). I did manage to get the one sticky slide to work at the same rate as the others (little metal polish on there and she's nice and smooth again, falls at same rate as the other 3 now), then I went to make sure the pilot screw/afm were all at a good reference point (all have been previously uncapped) and notice 3 of the four had one side or the other broken off of the flat head slot...then I managed to break off part of #4).

The bike hasn't ran in 7 years, do I just hope it's close enough or do I fix it and get new ones in there and if so, how the heck do I get these corroded ones out? I've read that EZ outs don't work well in the brass and I've seen that a couple guys have broken their EZ outs in the screw while trying to extract them
