Bike Died today on the way to work

So after a long day i finally get home and start looking around.. I cant seem to figure out what i could be. I have some rough ideas but nothing definitive.

I did a few things to it during the rebuild and its been a couple months since that was finished.. Engine wise i just replaced the plugs, air & fuel filter, oil change + filter, carb clean and sync, Floats set, petcock clean but no rebuild, fuel filter seemed pretty solid.

Shortly after the rebuild i had an electrical problem and ended up replacing both the starting motor and rectifier but the stator checked out good. Its been running great since then but today it died mid ride and that was it.. It sat all day and most of the afternoon, I just got back in from checking things out.

Now as it is right now i got it running again but after a short mile ride it died and had to walk it home. I torn between it either being a fuel issue or some kind of air flow issue but im not sure.. Choke out, no throttle it kinda sounds like it wants to get going and sometimes starts but is very rough and chills really low rpm wise. The second i touch the throttle it dies. And it wont even give me any sign of life with the choke in. Im thinking flooded with fuel or not enough air getting into it, hopefully someone knows something else i can check.

post might be a little premature since i still havent checked everything i could.. Havent removed the gas tank yet to see if the filter is clogged but im probably gonna head out there and try that either right now or in a little when it isn't a billion degrees out lol

i planned to adjust the valves and further tune to carbs in the future because i cant get the exhaust temps to get where they should be at all.. They are close to each other but higher then 500 by more than i would like.. off the top of my head 1. 700 2. 650 3. 580 4. 680

Not sure that info will help but its good to get it out there.. further tuning of that will help im sure but only after deal with what problem that is at hand.
