17.5 to #20 pilot jet, can someone explain a bit?

browsing the forums on xj mods as i was looking to give mine a little kick up the ass as its a little lacking (i got beaten by a mercedes off the lights)
its a 1997 xj 600s diversion.
was reading up on changing the pilot jet from the 17.5's to 20's, could someone explain why i would need to do this and what benefits if any will i get.
ive never really messed with jets other than on my ex girlfriends chinese 125 moped.
Possibly tomorrow if the weathers good i will be removing the carbs and giving them a big overhaul as they probably need it by now.
