Complete Carb Tuning Confusion!!

I just got done with a valve adjustment....piece of cake.
Just got done with a carb cleaning....piece of cake.
Set float heights dry and then wet to verify....piece of cake.
Sync'ed the carbs....piece of cake.
But then when I tried setting the pilot screws :censor: hit the fan. I am setting them with an infrared thermometer and on cylinder #4 i could get the temperature to fluctuate between 490 and 510. I then moved on to cylinder #3 and got that set within the same range. But then all of a sudden all of my temperatures would raise up to over 600 and stay they there for quite some time. Also on cylinder #1 I cant get the temperature anywhere close to 500. It is either above 600 or below 300 and I cant seem to get it right in the sweet spot. Can anyone shed some light on what is going on because it is driving me bonkers.
Also, as a side note, how hot is too hot for the engine to be because by the end of my fidgeting my engine was almost 400 degrees and the oil was 300. Which seems like it is way too hot for it.
