Very high idle with choke on

Ok so after sitting for more than 10 years the bike starts. But I feel I have to shut it off as the idle with choke on shoots well past 4k and rising within the first 5 seconds seems like it will red line so I shut it off. Is there an adjustment for the choke. Have not let it warm up as I'm afraid it will blow. Idle screw adijusted butterflys closed. Idle air mixture at 2 turns out each carb. Nice clean carbs.
