Help with Clutch

Ok, so I went to do an oil change and replace the friction plates and springs for my clutch. Everything went well until I decided to check to see if the clutch was working/lever adjusted correctly before I added oil and fired it up again.

When I pulled on the clutch lever there was no resistance and after messing with cable adjustment it appeared that the release lever might have been too far forward.

So, I pulled the clutch cover off again and tried to move it farther back. I attempted this twice with no real luck so I thought perhaps I did not torque the pressure plate bolts down enough and that the springs weren't compressed enough to provide the tension needed.

I didn't have a torque wrench and was stupidly just trying to go by feel but keeping in mind that it is always too easy to over torque things. Well Murphy's Law being what it is, I sheared off the head of one of the pressure plate bolts so the remainder of that is still lodged in my clutch boss. :wallbash:

So, as of now I need to remove the broken bolt from the clutch boss, I need to find a replacement pressure plate bolt (which I'm hoping I will be able to find locally and not have to order offline), and I need to still resolve the issue with the clutch release lever not doing its job. So I'm here to ask you guys what your advice is.
